Located in the Pabst Brewery District, Pilot Project has taken over the space formerly home to Milwaukee Brewing Co., offering brewery incubator, restaurant and rooftop bar in one vibrant venue.
Founded in Chicago, Pilot serves as a launch pad for start-up breweries. But even if you are not about to begin your brewing career, you can visit to take a brewery tour, or enjoy food and drinks at the tap room and rooftop.
The spacious terrace offers both comfy lounge seating and bar spots, as well as open air spaces and a covered area. All surrounded with lovely views over the downtown skyline and Deer District.
Pretty much made for sunny and relaxing outings with friends, the Pilot Project rooftop menu features Italian street food, craft beer, hard kombucha, wine, draft cocktails and much more.
Always open to the public, but usually only staffed towards end of the week, the rooftop works on a first come, first serve basis.
